Sautéed Chicken Breast

Bite-sized pieces of chicken breast sautéed fast over high heat until golden, then finished with a fresh persillade of parsley and garlic. Cutting the breast small is the whole idea — the pieces brown quickly and cook through before the lean meat has a chance to dry out — for a savory, garlicky result that comes together in minutes.

Sauté the chicken
Season the chicken pieces with salt and pepper. Heat the oil in a skillet over medium-high heat until shimmering, add the chicken in a single layer, and let it sit for a minute to brown, then toss or stir frequently, cooking until golden on all sides and cooked through, about 6–8 minutes total.
Finish with persillade
Off the heat, stir in the garlic and parsley, tossing to coat. Finish with a squeeze of lemon if desired.
