Teriyaki Sauce

A glossy Japanese-style glaze of soy sauce, mirin, and sugar reduced until sticky and pourable, with a splash of rice vinegar for brightness. Sweet, salty, and lightly tangy, it lacquers beautifully onto grilled or roasted chicken, salmon, and vegetables, thickening into a shiny coat as it cooks.

Method
Combine the soy sauce, mirin, sugar, and rice vinegar in a small saucepan and bring to a gentle simmer, stirring until the sugar dissolves, then simmer 5–8 minutes, until glossy and slightly syrupy. Let cool before using, or spoon it onto food near the end of roasting or grilling so it can reduce into a sticky glaze.
Microwave method
Combine everything in a large microwave-safe measuring cup or bowl, then microwave in 30-second bursts, stirring between each, until the sugar dissolves and the sauce is glossy and lightly reduced, about 2–3 minutes total.
