Sausage Gravy

A rich, peppery Southern breakfast gravy: milk thickened into a roux built in the fat from browned breakfast sausage, studded with the sausage crumbles themselves. Spooned hot over split biscuits, it's hearty comfort food made in a single skillet from just a handful of ingredients.

Method
Brown the sausage
Brown the sausage in a skillet over medium heat, breaking it into crumbles, until fully cooked, about 6–8 minutes. Do not drain the fat.
Make the gravy
Sprinkle the flour over the sausage and fat, stirring to coat, and cook 1–2 minutes, then slowly whisk in the warm milk, stirring out lumps as you go. Simmer, stirring often, until thickened, 5–7 minutes, then season generously with salt and black pepper and serve over biscuits.
